Success, even without an oven...

My oven has been out-of-commission for a good long three months now. Something spilled down onto the bottom of the oven and onto the coil, and while it is pretty clean, it still smokes and sets off my smoke detector. And for those of you who know me, I have a huge fear of fire, so the smoke detector sounding is not something I like to hear.

While I have no oven and I do love to cook and bake, I have become quite creative with meals and desserts on the stovetop and in my new crock pot.

So tonight I found a recipe online, but decided to tweak it a bit and came up with something that looks pretty tasty.

Tonight's success: Mascarpone with Raspberries and Pineapple.

1 cup mascarpone, softened
1 cup raspberry yogurt
1 8oz. can pineapple tidbits, drained and finely chopped
Lemon juice
Ladyfingers
Fresh raspberries

Mix mascarpone and raspberry yogurt until combined. Stir in pineapple. In a medium serving dish (mine is 7 1/2 inches, holds 5 1/4 cups), make layer ladyfingers. Brush with lemon juice. Cover with portion of mascarpone-yogurt mixture. Repeat twice so there are three layers of ladyfingers and three layers of mascarpone-yogurt mixture. Refrigerate. Top with fresh raspberries when ready to serve.


From what I can tell, this will be a light and delicious dessert. We'll find out tomorrow night just how successful of a non-oven delight this is...

I am so excited that you have a blog now! And hey, are you going to any of the Beth Jacob Megillah readings? Jess is trying to convince me to go to Beth Jacob instead of B'nai Emet for Purim and I may just do it if you're going to be there!
